Complete refurbishment of the kitchens and dining hall has allowed the Bistrot de Venise to pursue an important objective : the rediscovery of Venetian Cuisine from the Renaissance period. Aided by Prof. Marcello Brusegan, a researcher at the Marciana library in Venice concerned with Mediaeval gastronomy, the restaurant is currently serving recipes that have sadly disappeared from the Venetians’ tables in an attempt to reinstate them : a kind of historical food trail that has marked the most significant episodes of the Venetian Republic.

The Aciugheta, well-known in town for its excellent selection of wines, is also mentioned in all the national and international guides for the great variety of "cicchetti" (bite-sized snacks and appetizers such as meat-balls, small stuffed peppers and freshly baked pizzette with anchovies) that can be tasted at the counter.
